All you need to do is throw all of the ingredients into a food processor, blend, form into small balls, and enjoy these perfect no-bake snack!
Ingredients
300 g Medjool dates
100 g sultanas
1/2 cup rolled oats
1/2 cup muesli, I used a mix of berries & cherries
1/2 cup finely shredded coconut + (extra 4 tbsp for coating the balls)
2 tbsp chia seeds
1 lemon, zest
2 tbsp lemon juice
1 tbsp vanilla bean extract
1/2 tsp ground cinnamon
pinch of sea salt
Method
1. Add the Medjool dates to a food processor and pulse a few times until chopped. Put the rest of the ingredients in and switch on for a couple more seconds, or until all the ingredients are well incorporated.
2. Take a teaspoon of the mixture and roll between the palm of your hands into a ball. Place the coconut in a shallow bowl and use it to coat the bites all over.
Tip
Muesli is usually eaten with milk, so using it in this recipe will give it a bit of crunch due to its dryness. To avoid this, you can soak it in a little bit of water (together with chia, if you like) before adding it to the food processor. Just make sure to squeeze out the excess water!
