Delicious and super easy to make! The perfect way to use any leftover pancakes
Ingredients
3 tbsp sunflower oil
1 onion, chopped
250 g pork or beef mince
100 ml tomato purée
1/2 tsp oregano
1 tsp salt and freshly ground black pepper
150 g mozzarella, grated
100 g crème fraîche
100 g dry-cured mustard ham, chopped
tomato ketchup
10 pancakes
Salad, to serve
Method
1. Preheat the oven to 200°C / 180°C fan / Gas Mark 6. Heat the oil in a pan and fry the onion for 5-8 minutes or until softened. Add the mince and cook for a further 10-15 minutes. Add tomato purée, oregano, salt, and pepper. Cook for another couple of minutes before setting aside.
2. Coat the oven dish (18cm x 24cm) with oil and place two pancakes at the base. For the first layer, pour half of the meat mixture into the dish, sprinkle in some mozzarella then cover with two more pancakes. For the second layer, spread the crème fraîche on top, add ham, mozzarella, and a good squeeze of tomato ketchup. Top with two more pancakes.
3. Repeat the process in step 2 to create the third and fourth layers. Sprinkle some more cheese over the top and bake for 10-15 minutes, or until golden brown.
Tip
Add some grated carrot to the onion for extra flavour!
