Serbian Small Cheesy Bites

This is a traditional Serbian food and they taste so nice when they come fresh out of the oven. My husband’s aunty Rada has got golden hands when it comes to making those. I always remember her cooking whenever I make cheesy bites.

Ingredients

2 eggs, beaten

280 g Philadelphia light

½ tsp salt

2 tbsp sunflower oil + extra 4 tbsp

10 sheets of filo pastry sheets

For sprinkling and brushing

1 egg yolk, beaten

1 tbsp sesame seeds

50 g butter, cubed

Method

1. Preheat the oven to 200 C. In a bowl, mix the eggs, cheese, salt and 2 tbsp of oil together.

2. Take one sheet of filo pastry and sprinkle with 2 tbsp of oil. On top of that, put a second filo and spread with cheese mixture, about 5-6 tbsp and again filo pastry, filling, repeat the process until you have used five filo sheets. Do the same with another five sheets of pastry.

3. Starting from the short side roll up the pastry, then cut it with a sharp knife into about 13 little logs-2 cm widths. Place the cut side down on the baking sheet, brush with egg yolk, sprinkle each with seeds and top them with a cube of butter.

4. Bake in the preheated oven for approx 20 mins or until the filo is golden brown.

Goes well

With plain yoghurt or just a glass of milk, it can be eaten hot or cold. They are great as party food as well.

ENJOY!
