Roščići sa Rumom i Orasima / Old Fashioned Walnuts & Rum Cookies

Miriše na zimu, na sneg, a sada bi već i kuhinja moje majke i bake mirisala na vaniliju i orase da su tu sa nama. Sećam se zaprljane majkine pregače, iako je uvijek bila besprekorno čista, ali kad su se pekli božićni kolačići, čini mi se da je uvek dopustila da se malo zaprlja brašnom ili smo tome pridoneli mi dečica, neprestanim motanjem oko nje.

 

Ukusni prhki keksi, punjeni orasima i zamirisani limunom i rumom, jednostavno se tope u ustima. Recept je sa starih požutelih listova, napisan majčinom rukom prije više od 40 godina i to običnom olovkom na sada vec žutoj hartiji, neverovatno čitljivim slovima i nakon tolikih godina.


Roščići

250 g brašna

150 g maslaca

3 kašike šećera, malo soli

2 žumanjca

1 jaje

7 g germe

2 kašike kajmaka

Punjenje

250 g mljevenih orasa

6 kašika mleka

5 - (12)* kašika šećera

2 kašike ruma

korica 1-og limuna


Spajanje

iskoristiti belanjca


Premaz

žumanjce, malo mleka


Priprema

1. Sa prosijanim brašnom izmrviti hladan maslac, dodati šećer, malo soli, žumanjca, jaje, germu i kajmak. Zamjesiti tjesto i ostaviti da odmara 30 minuta.


2. U međuvremenu pripremiti punjenje. Orase popariti sa vrelim mlekom, dodati šećer, rum i limunovu koricu, dobro izmešati.


3. Pripremljeno tjesto razvaljati, rezati na kvadrate (otprilike 10x7cm), staviti na svaku kašičicu nadjeva od orasa, rubove spajati sa belanjcom, lagano zarolati na radnoj površini te saviti u roščić. Slagati na pripremljene plehove obložene papirom za pečenje, ostaviti ih da jos nadođu.


4. Zagrijati rernu na 170°C(rerna na zrak), žumanjce lagano razmutiti sa malo mleka, premazati roščiće, peći 15-17 minuta ili dok počnu rumeniti. Od ove mere dobije se oko 24 roščića.


Savet *

Recepti iz davnina su nekada bili mnogo slatki, rekla bih preslatki, bar za mene. Ja ću ionako roščiće pre služenja posuti prah šećerom, zamirisanim vanilijom. A kafu nikako nemogu popiti bez šećera, ja sam šećer smanjila u keksićima al' dodala u kafu. A ako volite slađe, pratite original recept, tj. veću brojku od navedenih *

Old Fashioned Walnuts & Rum Cookies

 


Delicious soft bites filled with walnuts and a scent of zesty lemon and rum. This recipe comes from the pages of my mother's cookbook, written more than 40 years ago.


For the Cookies

250 g plain flour

150 g butter

3 tbsp caster sugar

2 tbsp crème fraîche

2 egg yolks

1 egg

7 g dry yeast


For the Filling

250 g ground walnut

6 tbsp milk

5 - 12* tbsp caster sugar

2 tbsp dark rum

lemon zest


*The original recipe uses 12 tbsp, but I prefer it with 5 tbsp.


For the Brushing

1 egg white

1 egg yolk


Method

1. Put the sifted flour in a mixing bowl and add cold butter (diced). Rub with the palms of your hands until the texture becomes crumbly. Add the rest of the ingredients and mix together to form a soft dough. Leave to rise for 30 minutes.


2. In the meantime, you can begin to prepare the filling. Put ground walnuts and hot (nearly boiling) milk into a bowl and mix together. You may not need to use all of the milk, so add sparingly; the mixture needs to be thicker than spreadable butter. Add the sugar, rum, and lemon zest. Mix all thoroughly and leave to the side.


3. Prepare the baking trays. Roll the dough to a thickness of 4 mm. Cut out 10x7cm rectangles, putting a teaspoon of filling onto each, and brush the edges with an egg white wash and close by rolling it up. Place them on the baking trays in a horseshoe shape, and leave to prove while the oven heats up.


4. Preheat the oven to 170 C (fan). Mix the egg yolk with 3 tbsp of milk and use to brush the cookies. Bake for 15-17 minutes, or until golden brown. Dust with icing sugar before serving.


Makes 24 cookies.
